Recipe: Green Onion, Bacon and Corn Scones


Our pastry team, led by Executive Pastry Chef Mia De Ala, consistently impress event and meeting attendees by creating the most delicious and unique desserts in-house.

While we all navigate our new normal at home, Mia recently shared her easy yet delicious recipe for green onion, bacon and corn scones. They are perfectly easy to make with many of the ingredients you may already have in your kitchen. An instructional video can be found on our IGTV channel on our Instagram page @mtcc_events.


Green Onion, Bacon and Corn Scones


  • 230g of cooked fresh or canned corn
  • 4 pc of bacon chopped (can add more)
  • 52g of cheddar (can be your choice)
  • 170g of unsalted butter (cubed and chilled)
  • 20g of green onion chopped
  • 357g 35% cream
  • 1pc arge egg
  • 380g all-purpose flour
  • 120g fine ground cornmeal
  • 24g baking powder
  • 6g salt
  • 30g sugar



1. Heat oven to 425F.

2. Sift together the flour and baking powder.

3. Add salt, sugar, and cornmeal.

4. Mix ½ cream and egg together and whisk.

5. Add butter to dry ingredients and rub butter between fingers to break fat into smaller pieces until you get pea size pieces.

6. Add corn and bacon and mix together until evenly distributed.

7. Then add egg and cream mixture and then add about ½ the cream.

8. Mix dough and see if you need to add the rest of the liquid.

9. Once dough has come together then take flour and lightly kneed until smooth and start flattening out.

10. Take rolling pin and roll until dough has ½’ thickness or about the same height as your hand flattened on the table .

11. Let rest for 10-15 min.

12. Cut with desired shape and place on a tray.

13. Make egg wash (1 egg, 1 yolk, 1 tsp milk, pinch salt) and brush scones Bake for 10 min and turn tray.

14. Continue to bake 8-12 min until golden browned.
